Easy Pumpkin Bread Recipe

This pumpkin bread features a rich pumpkin flavor complemented by cinnamon, nutmeg, and cloves. The recipe takes about 1 hour from start to finish and yields two loaves, making it perfect for sharing or freezing.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. Combine Wet Ingredients: In a large bowl, mix the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until well combined.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the nuts or chocolate chips.
  5. Bake: Divide the batter evenly between the prepared loaf pans. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Allow the bread to cool in the pans for about 10 minutes before transferring to a wire rack to cool completely. We love pairing this bread with a warm cozy cup of chamomile tea.
