The recipe takes about 45 minutes from start to finish and serves 6 people. At our house, after enjoying our warm soup we usually grab a couple of our home made cookies that my lil chef bakes.
Ingredients
- 1 cup dried lentils, rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions
