Ingredients

  • 4 mini pumpkins
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or pepper jack)
  • Fresh parsley for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Pumpkins: Cut the tops off the mini pumpkins and scoop out the seeds and stringy insides. Set aside.
